Lately I’ve been saying the word “delish” a lot. And it’s actually sort of freaking me out. “Delish” is such a gross sounding word! Yet everyday… there I am… using it in really creepy way! But today, the word “delish” actually applied to my baking. We made Ricotta Brownies all the time when I was a little girl… it was one of my most favorite desserts. A perfect mix of a cheesecake texture and a brownie taste, it’s even fairly simple to bake! Maybe I wanted to make cheese-flavored brownies because Wisconsin loves their cheese so much?
-2 1/2 cups sugar, 4 eggs, 2 tsp vanilla, 1 cup flour, 1 cup butter, 1 cup ricotta, 4 ounces of semi sweet chocolate, 1/2 teaspoon salt
-Melt butter and chocolate. Stir in 2 cups of sugar and 3 eggs. Stir in flour, salt and vanilla. Spread in greased 13×9 pan. Mix ricotta, 1/2 cup sugar and 1 tsp vanilla and 1 egg in separate bowl and pour on top of the chocolate. Swirl to make everything look a bit prettier!
